In the perfect world, all recipes would use the same measures. Unfortunately, this is not the case. Older recipes as well as recipes from other countries often refer to measures different than cups and teaspoons. The following tables will help if you encounter such a recipe.

Common Ingredient Measures

Below is a list of the weight conversion from 1 cup to ounces for several of the most common baking ingredients.

Assorted dry ingredients

Flour (all types) – 4.25 ounces

Cocoa – 3.33 ounces

Corn meal – 4.5 ounces

Corn starch – 4 ounces

Fats

Butter – 8 ounces (1/2 ounce per tablespoon)

Shortening – 6.75 ounces

Vegetable oil – 6.75 ounces

Eggs, large

Whole – 1.75 ounces

Egg white – 1 ounce

Egg yolk – 0.75 ounces

Liquids

Milk – 8.5 ounces

Buttermilk – 8.5 ounces

Half & half – 8.5 ounces

Heavy cream – 8.1 ounces
